I love to cook but I have never been much of a baker. However, being stuck at home due to Covid, my daughter and I decided to attempt this for Thanksgiving. SO delicious! We are definitely doing this again for Christmas.
Mini Pecan Pies
These Mini Pecan Pies are easy to make and can also be made ahead of time.

- Cook Time: 25 minutes
- Total Time: 55 minutes
- Servings: 12 mini pecan pies
Ingredients:
- 1 pie crust (store-bought or homemade)
- 1/3 cup light corn syrup
- 1/4 cup brown sugar
- 1 and 1/2 tablespoons unsalted butter, melted
- 1 egg lightly beaten
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped pecans
