Warm, Hearty, Healthy Soup in 30 Minutes!

On a recent cold Sunday morning, as I was reading the newspaper, I ran across this warm, hearty soup recipe giving me another way to eat kale, the healthy food. As I read through the ingredients and the directions, I thought I would give it a try. The directions were easy to follow and prepping took no time at all. I had hot soup ready within 30 minutes. It’s an Italian-style soup, adapted from Milk Street: Cookish by Christopher Kimball. Delicious! Give it a try. This is one recipe I will repeat!     

Polenta Soup with Kale and Parmesan

3 Tbsp. extra-virgin olive oil, plus more to serve

1 Large yellow onion, diced

2 Medium cloves garlic, finely chopped

1 Tbsp fresh rosemary, minced

2 tsp kosher salt, plus more to taste

1 tsp ground pepper

¾ Cup coarse stone-ground yellow cornmeal

2 Quarts of water

1 bunch kale, stems cut off and leaves torn into rough 1” pieces

1 (15oz) can cannellini beans, rinsed and drained

4 oz Parmesan cheese, finely grated (2 Cups)

In a large pot over medium, heat oil until shimmering. Add onion, garlic rosemary, salt and pepper. Cook, stirring, 3 minutes or until onion is translucent. Add 2-quart water, then whisk in cornmeal; bring to a simmer. Reduce to low, cook, uncovered 15 minutes, stirring occasionally and scaping bottom f pot to prevent sticking. Stir in kale and beans; cook, stirring, 5 minutes or until kale and cornmeal are tender. Stir in Parmesan, season with salt and pepper. Serve drizzled with olive oil and sprinkled with more cheese.  Serves 4-6.
