You don’t have to be an expert in the kitchen to take our classes; they are specially designed for beginners, intermediates and advanced-level enthusiasts.
Instructor Marcel Flori has over 20 years experience as a sommelier and was ranked 3rd Best Sommelier of America in 1986, as well as Best Sommelier of the Midwest in 1986. He teaches the Continuing Education wine program and is a member of Harper’s Hospitality Department faculty.
BLIND WINE TASTING (LFS 0415): You really learn about wine in a blind tasting! Get tips on tasting and practice how to identify wines. Put this new knowledge to the test in a friendly competition with your classmates. Cultivate your senses at a new and higher level with instructor Marcel Flori. Students must be at least 21 years old to enroll.
FOOD, WINE AND CELLARS (LFS 0393): Eliminate the mystery of which wines to serve. Marcel Flori will discuss the pairing of food and wine utilizing his over 20 years in the restaurant business. Appropriate wines for before, during and after the meal will be discussed to provide a range of options for the wine connoisseur. Then Marcel will provide the knowledge to develop a wine cellar that will provide years of pleasure. Students must be at least 21 years old to enroll.
INITIATION TO WINE (LFS 0391): You have been to tastings and have begun to understand what you like. It is now time for you to fill in the blanks. This course paints the picture of how wine is produced, what is significant in production and what vintages are. You will also learn what to look for and how to truly taste wine. The class includes one wine tasting. Students must be at least 21 years old to enroll.
INTRODUCTION TO WINE, SPIRITS AND BEVERAGE MANAGEMENT (LFS 0027): Learn alcoholic beverage classifications, alcoholic beverage laws, regional wine purchasing and controls, promotional techniques and beverage service. Foundational principles and theories are presented which support and reinforce practical beverage management practices. Must be a minimum age of 21 to enroll. Co-listed with credit FSM216-C01.
SING-ALONG WINE TASTING (LLI 1171): With his guitar in hand and his rich voice, Marcel Flori will talk about the great vocal jazz songs of the last century, play songs for you, and invite you to sing along if you wish. He will also talk you though tasting wines that pair well with the pizza you will be eating. What better way is there to spend an afternoon? Must be 21+ to register. Wine and Pizza with a Professor. This is a Lifelong Learning (55+) course.
SURVEY OF WINES OF THE WORLD (LFS 0392): The variety of wine produced around the world can be overwhelming. We will survey the most important wines to give you a firm grounding in the most common and popular varieties found in restaurants, bars and stores. Marcel Flori will take you on this tour which includes tasting examples from each category. This course is of immense value to those working in the hospitality industry and will be a joy for anyone who is interested in wine and all its variety. Students must be at least 21 years old to enroll.
WINE 101: SIP & SAMPLE (LLI 0027): Engage your senses as you bask in the aromatic qualities of various wines. Explore your palette preferences; learn how wines interact with different appetizers; discover some tricks of the trade from your wine guide. Not sure you like wine? This is the perfect class for you. We cater to beginners and offer both red and white wines. As with all classes, serving alcohol, students must be at least 21 to enroll. Instructor Susan Mulvey earned her Wine Sommelier Certificate from Harper College’s Continuing Education program. This is a Lifelong Learning (55+) course.
WINE AND CHEESE PAIRING (LFS 0396): Wine and cheese are natural partners but some pairings can be disastrous while others can bring out the subtle beauty of taste in each. Prepare to make the appropriate pairings with various varieties of wine. You will taste the wine in addition to developing your understanding of wine and cheese. You will then be able to create the wine and cheese experiences you seek in either professional or personal enjoyment settings. Students must be at least 21 years old to enroll.
WINE AND CHOCOLATE PAIRING (LFS 0411): Marcel Flori will provide you with a full presentation pairing wine and chocolate. You will then engage in mini-tastings of chocolate and wine covering the most important examples of what can be done when pairing these most delectable flavors. Students must be at least 21 to enroll.
WINE SOMMELIER CERTIFICATE: EUROPE (LFS 0502): A wine sommelier will have to demonstrate a deep knowledge from wine produced around the world. This semester will complete a mastery of the wine producing regions across Europe. Additionally, you will develop an understanding of how to make appropriate pairings of food and wine. Completion of both Wine Sommelier Certificate classes is required prior to your taking the Harper College Continuing Education Wine Sommelier Certification exam. WINE SOMMELIER CERTIFICATE: TASTING AND SERVING (LFS 0501): Prepare for a professional career in a restaurant or retail store where you will assist customers with their wine needs and food pairings. In the first of this two class series you will master tasting methods, buying, selling and serving wine. In the second class, you will begin an in depth study of wine produced around the world. Finally, you will be provided an internship opportunity to begin to exercise your new knowledge. You should have completed the Initiation to Wine class or have experience in the serving of wine and must be 21 to enroll.
WINES OF ITALY (LFS 0414): Italy is home to some of the world’s oldest winemaking traditions, and is the world’s largest wine producer by volume. Every province produces excellent wine, ranging from sweet to dry, and includes sparkling wines. Many of these quality wines are affordable. You will survey the wines of the regions, including Tuscany, Piedmont, Northern Italy and Southern Italy, and discuss pairing recommendations. Spend some time living the Dolce Vita with our instructor, Marcel Flori. His classes have a reputation of being both highly informative and thoroughly enjoyable. Students must be at least 21 to enroll.
